Healthy Lentil Salad

3 cups canned Metelliana Continental Lentils
1 cup canned Metelliana Italian Chick Peas
½ cup sliced Cypressa Greek Black Olives
½ cup chopped Cypressa Roasted Red Peppers
½ cup shredded fresh carrot
chopped fresh basil leaves
½ cup Cypressa Extra Virgin Olive Oil
fresh lemon juice and salt and pepper to taste

  1. Rinse the canned lentils and chick peas.

  2. Combine all the ingredients in a bowl.

  3. Add lemon, salt and pepper to taste.
