Honey Fritters (Loukoumathes)

30g (1oz) yeast
Warm water
3 cups plain flour
Salt
Cypressa Olive Oil
Cypressa Greek Honey
Ground cinnamon

  1. Dissolve the yeast in a little warm water, in a bowl.

  2. Add one cup flour and salt and mix well.

  3. Allow to stand covered with a tea towel in a warm place until the mixture doubles in volume (about 1½ hours).

  4. Gradually add the remaining two cups of flour and sufficient warm water to form soft dough. Knead well.

  5. Cover and allow to stand in a warm place a further 3-4 hours.

  6. Heat the olive oil in saucepan until it begins to smoke.

  7. Drop spoonfuls of dough into the hot oil and cook over high heat until golden. Drain.

  8. Drizzle with honey, sprinkle with cinnamon and serve hot.
