Baked Beef With Pasta Rice (Yiouvetsi)

1½ kg (3lb) beef, in one piece
3 cloves garlic, crushed
Salt and pepper
6 ripe tomatoes, peeled and chopped
1 dessertspoon tomato paste, dissolved in a little hot water
3 tablespoons Cypressa Olive Oil
90g (3oz) butter, cubed
10 cups water, or more if needed
500g (1lb) Orzo Pasta Rice
250g (8oz) cheddar cheese, sliced thickly
Garnish: grated parmesan cheese

  1. Slit meat in 3-4 places.

  2. Mix crushed garlic with salt and pepper to taste.

  3. Stuff slits in meat with the garlic mixture.

  4. Rub the meat with salt and pepper.

  5. Place the meat in an earthenware baking dish.

  6. Add tomatoes, tomato paste, oil, butter and 2½ cups of the water.

  7. Bake in a moderate oven until tender, turning frequently and adding a little water as required preventing sticking and burning.

  8. When the meat is cooked, remove from baking dish and keep warm.

  9. To the same baking dish, add remaining 7½ cups water.

  10. Pour in Orzo Pasta Rice, return to the oven.

  11. Cook until the noodles are soft and all the liquid is absorbed.

  12. It may be necessary to add more water to the pasta rice during cooking.

  13. Add the cheese to pasta rice, return to the oven and cook until the cheese has melted.

  14. Return the meat to the baking dish and serve with Parmesan cheese.
