Cracked Wheat Salad

2 cups Cypressa Organic Cracked Wheat
small bunch flat leaf parsley, chopped finely
3 tomatoes, diced small
8 spring onions, sliced
4 green peppers, diced small
½ teaspoon ground red pepper
1 tablespoon tomato puree
1 tablespoon dried mint
½ cup Cypressa Extra Virgin Olive Oil
2 lemons
Salt to taste
Lettuce

  1. Rinse the cracked wheat several times until the water runs clear and place in a large saucepan.

  2. Pour 2 cups of boiling water over the cracked wheat and cover with a tight lid.

  3. When the cracked wheat has swelled (about 20mins) add the ground red pepper, tomato puree and salt and mix well with a fork.

  4. Add the rest of the vegetables and mix through with a fork.

  5. Add the olive oil and lemon juice and mix again.

  6. Pour the salad out onto a bed of lettuce leaves to serve.
