Nutty Turnovers (Skaltsounia)

1 cup Cypressa Extra Virgin Olive Oil
1 teaspoon baking powder
Pinch of salt
4 tablespoons orange juice
2 tablespoons Metaxa Cyprus Brandy
4 cups plain flour
Rosewater
Icing sugar

Filling:
1 cup chopped walnuts
1 cup Cypressa Almonds, chopped
½ cup Cypressa Greek Honey
½ cup sultanas
¼ teaspoon ground cinnamon

  1. Mix all the filling ingredients together in a bowl and set aside.

  2. In another bowl, combine the olive oil, baking powder, salt, orange juice and brandy.

  3. Beat lightly with a fork.

  4. Gradually add the flour, stirring with a wooden spoon to form a stiff dough.

  5. Roll out the pastry to an approximate thickness of 5mm (1/4 inch) thickness.

  6. Cut the pastry into circles about the size of a small saucer.

  7. Place a spoonful of the filling mixture on one half of each circle.

  8. Fold the circles in half to cover the filling completely and press the edges down with a fork.

  9. Place the pastries on a well greased and floured baking tray and bake in a moderate oven for about 20 minutes, or until golden brown.

  10. Allow to cool on a wire wrack.

  11. When the turnovers have cooled, brush liberally with rosewater and roll in the sifted icing sugar until completely coated.

  12. Serve with coffee.
