500g Cypressa Halloumi Lite
2 tomatoes
1 onion
1 red pepper
4 Cypressa Hot Peppers
1 teaspoon dried oregano
salt and pepper to taste
6 tablespoons Cypressa Extra Virgin Olive Oil
Preheat oven to 400°F / 200°F / gas mark 6.
Slice the halloumi into about 8 slices and lay side by side in an ovenproof dish.
Peel and slice the onion.
Remove the seeds and pith from the red pepper and cut into thin strips.
Chop the hot peppers.
Spread all the ingredients evenly over the halloumi including the salt and pepper and oregano, then drizzle the olive oil on top.
Bake in the oven for 25 – 30 minutes and serve hot with crusty bread.
