145g Cooked Quinoa (50g uncooked weight)

1 medium egg

2 medium egg whites

25g vanilla protein powder (optional)

1 tsp honey

½ tsp ground cinnamon

2 tsp coconut oil

70g mixed berries or own choice of fruit or topping

½ tsp mixed spice

 

Quinoa Pancakes

Method

  • Cook the Quinoa and cool down completely before use or cook the quinoa the night before to save time.

  • Whizz up the cooked quinoa, egg, egg whites, honey, protein powder and cinnamon in liquidiser until smooth

  • Melt the coconut oil in a frying pan over a medium-heat and fry large spoonful of the batter for 1 minute, then flip and cook for a further 30 seconds. Repeat with the remaining batter.

  • Roughly chop/mash the berries with a fork then stir through the mixed spice.

  • Stack up the pancakes and spoon the berries over the top to serve
