145g Cooked Quinoa (50g uncooked weight)
1 medium egg
2 medium egg whites
25g vanilla protein powder (optional)
1 tsp honey
½ tsp ground cinnamon
2 tsp coconut oil
70g mixed berries or own choice of fruit or topping
½ tsp mixed spice
Cook the Quinoa and cool down completely before use or cook the quinoa the night before to save time.
Whizz up the cooked quinoa, egg, egg whites, honey, protein powder and cinnamon in liquidiser until smooth
Melt the coconut oil in a frying pan over a medium-heat and fry large spoonful of the batter for 1 minute, then flip and cook for a further 30 seconds. Repeat with the remaining batter.
Roughly chop/mash the berries with a fork then stir through the mixed spice.
Stack up the pancakes and spoon the berries over the top to serve
